This week's item? Wilted Lettuce!

Week 1 Recipe Challenge:
Charred Wilted Lettuce Cups


  • 1 head of lettuce (romaine, iceberg, or your fave)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Your favorite filling (think: leftover rice, shredded chicken, beans, or veggies)


  1. Preheat your grill or a cast-iron skillet over medium-high heat.
  2. Cut the lettuce head in half or quarters, keeping the base intact so the leaves hold together.
  3. Brush the cut sides with olive oil, and season with salt and pepper.
  4. Char the lettuce on the grill/skillet for 2-3 minutes until you get those gorgeous grill marks.
  5. Remove from heat, let cool slightly, and stuff with your chosen filling. Enjoy your crunchy, flavorful lettuce cups!
