Despite the clear connection between the food we eat and our well-being, many Americans struggle to achieve a healthy diet. One of the things we're most passionate about at Pulp Pantry? Fruits and Vegetables! Yet 9 in 10 Americans don't eat enough servings of fruits, vegetables or fiber each day.
Only 5 percent or so of U.S. adults and children get adequate fiber, an ingredient critical to managing sugar levels, inflammation, and cholesterol. Almost 10 percent of Americans have some kind of nutritional deficiency.
The causes of these dietary challenges are complex, encompassing the geographic availability of healthy foods, the costs of nutritious options, cultural norms, and other factors.
There is no silver bullet solution, and the best choice often comes down to making sure to eat a wide variety of foods. However, it is impractical if not impossible for many Americans — constrained by time, money, available choices, or all of those and other factors — to assemble a perfect diet. But while you're on the hunt to eat a more balanced diet, consider this: some foods DO pack more nutritional punch than others, and they've earned a nickname. They're called whole foods.

5 grams of fiber per Serving
fiber is uber important - and it's not being talked about enough in the craze for protein these days.
Whether you call it "roughage" or "bulk," this part of food that your body can't digest has a big positive impact. Some of the ways it helps your health include:

controlling blood sugar levels, which assists with everything from diabetes to sugar rushes (and crashes);

reducing "bad" cholesterol levels, protecting your arteries from plaque build-up and also lowering your blood pressure in the process;

improving bowel function, possibly reducing the risk of diverticular disease and colorectal cancer;

giving a full feeling after eating, making it easier to control how much you're consuming and manage your weight.
Our fiber comes from two upcycled ingredients: the pulp from cold-pressed juice and a little-known ingredient called okara flour, the byproduct of making tofu.
With growing awareness of the role of dietary fiber in human health, interest is increasing in using okara due to potential health benefits, such as preventing obesity (Matsumoto et al., 2007) and suppressing cholesterol levels (Fukuda et al., 2006).
12g net carbs per Serving
Our chips are lower in net carbs than leading brands - in fact, most veggie chips on the market have 18-19 grams of net carbs per serving, given that they have only 1 (or zero!) grams of fiber. Talk about empty calories!
Carbs are important - they aren't the enemy. Mindfully choosing foods that provide not only the energy stored in carbs, but the balance of protein and other nutrients that create the sustained energy and satiated feeling, is important to maintain overall health.
8g of fat per Serving
Our fats come from high oleic sunflower oil. Sunflower oils with more oleic acid are higher in monounsaturated fat and lower in polyunsaturated fat.
Some studies suggest that consuming high oleic sunflower oil, especially in place of saturated fats, may help reduce your risk of heart disease by lowering LDL (bad) cholesterol and raising HDL (good) cholesterol. However, more research is needed. Read more here.

Most of our protein comes from a superstar upcycled ingredient: okara. Never heard of it? That's ok!
Okara is a byproduct of the soy milk production and contains 24.5–37.5% proteins, 9.3–22.3% fat, 14.5–55.4% crude fibre, and 0.1% isoflavones (Jiménez-Escrig et al., 2008).
The protein in okara is of better quality than that from other soy products, e.g., the protein efficiency ratio of okara is 2.71 compared with 2.11 for soymilk, but the ratio of essential amino acids to total amino acids is similar to tofu and soymilk.
