Overripe Avocado Vegan Chocolate Mousse

Overripe Avocado Vegan Chocolate Mousse

Overripe avocados are often one of the top items wasted at home. Instead of tossing them? Make this delicious dairy-free dessert. 

Ingredients:

  • 2 ripe avocados
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional toppings: Fresh berries, shredded coconut, nuts, or mint leaves

Instructions:
  1. Cut the avocados in half, remove the pits, and scoop the flesh into a blender or food processor.
  2. Add cocoa powder, maple syrup, vanilla extract, and a pinch of salt to the blender.
  3. Blend all ingredients until smooth and creamy. You might need to scrape down the sides a few times to ensure everything is well-mixed.
  4. Taste and adjust sweetness or cocoa to your preference.
  5. Spoon the mousse into small bowls or cups.
  6. Chill in the refrigerator for at least 30 minutes to let the flavors meld and to achieve a thicker consistency.
  7. Serve chilled, topped with your favorite toppings like fresh berries, shredded coconut, nuts, or a sprig of mint.
