Our Top Tips for Building a Beautiful Charcuterie Board: 

 

1. Get Access to the Best Produce. 

If you're avoiding the store, there are some great ways you can get produce locally. Search on google for "community-supported agriculture" or "local CSA delivery" to find farms that are delivering in your area. A CSA box is a great way to get produce delivered weekly, and support local farmers that may be struggling due to restaurant closers and lower demand from their usual customers. Plus, you'll get more produce on the cheap!

2. Plate with Your Favorite Dips. 


Now's the time to learn some go-to recipes for hummus and other plant-based dips at home! We've listed our favorite plant-based dips that fight food waste here. Here's a vegan nacho cheese sauce from Jaime Mok at the @the_yogini_RD:

"Comin’ in hot with a colorful spread of veggies, @pulppantry pulp chips (made from upcycled veggie pulp!!) and my 3 fave dips... pico de gallo, guac and vegan nacho cheese sauce."

★ The Recipe ★
1 c cashews
1/2 c non dairy milk
1/4 c nutritional yeast
3 tbsp lemon juice (1/2 large lemon)
1 tsp apple cider vinegar
1/2 tsp cayenne pepper
1/2 tsp smoked paprika
1/2 tsp salt
1/2 tsp granulated onion powder
1/4 tsp garlic powder
1 jalapeño (if you like an extra kick)

★ Directions ★


• Place cashews in a sealable container, then pour enough water to cover all the cashews and let them soak overnight.*

• The next day, strain the water from the cashews and put into a high-speed blender/vitamix along with non dairy milk, nutritional yeast, lemon juice, apple cider vinegar, and all the spices. Blend until smooth and creamy.

• If opting to add jalapeño, then thinly slice and set some aside for garnish.

•  Warm a small sauce pan over medium heat. Lightly coat pain with olive oil and add in sliced jalapeños. Add in cheese sauce and simmer for 5 mins on low.

•  Stir in 1 tbsp of non dairy milk at a time until you achieve your desired consistency.

3. Between veggies, add a snack you'll love to provide an extra pop of flavor, and a craveable crunch all in one.
