My compost rules are this: no citrus. It takes forever for those rinds to break down, and plus, some of those compost microbes really don't enjoy the citrus. Why can't citrus be composted? Citrus fruits (and randomly, onions) are not friendly for compost because of their acidity.

Why does acidity matter?

The acidity and natural chemicals in citrus peels are harmful to your compost bin's friendly microorganism and worm digesters, and can effectively slow down the rate of decomposition in the compost.

How to use your citrus peels?

Enter: citrus salt!

  • 1/4 cup Maldon Sea Salt
  • Grated skin of 1 navel orange
  • Grated skin of 1 lemon

  1. Preheat oven to 250 degrees. Combine the grated citrus peel and maldon salt into a bowl.
  2. At this point you can use the fresh citrus salt to line a glass for a nice mocktail or cocktail. Alternatively, place on a baking sheet and bake for 15 minutes until the grated peel is dehydrated.
  3. Store in an airtight container and use as a topping for salads, avocado toast, soups, and more!
